In order for Il Forteto Tuscan Pecorino Fresco DOP to be considered an authentic DOP Tuscan pecorino cheese by law it must be made of 100% sheep's milk from Tuscany produced only between the month of September and June.
Il Forteto Tuscan Pecorino Fresco DOP is a semi-hard Italian cheese with a compact structure and a light cream color that's much paler than its aged counterpart, Il Forteto Tuscan Pecorino Stagionato DOP.
A younger cheese, our Pecorino Toscano Fresco is aged for about 1 month, while the aged variety takes a minimum of 4 months to complete its aging process. This well-balanced Pecorino cheese is slightly sweet and nutty in flavor and suited for both cooking and as a table cheese. We like to savor this traditional Tuscan cheese with aged Italian prosciutto.

About Il Forteto
In 1977, young Tuscan locals created an agricultural cooperative called Il Forteto which got its start on land borrowed from a friend along with 40 sheep, three cows, and five pigs. Today, in addition to a producer of world-class cheese, Il Forteto is a community and a home dedicated to helping handicapped children and adults achieve their fullest potential. Il Forteto’s operation has expanded to 1,100 acres with a herd of 250 Chianina cattle, with sheep milk sourced only from local farmers. Among the primary exporters of the famed Pecorino cheese typical of Tuscany, Il Forteto’s cheeses are sold all over the world.
