In 2019 the consortium of Parmigiano Reggiano produced 3.75 million wheels, which is approximately 150 thousand tons of cheese...quite impressive. Parmigiano’s nutritional facts are unique and well appreciated all over the world. First of all this cheese is naturally lactose free, secondly the protein value is set at a rocket high 32%, and last but not least its composition of 30% water and 70% nutrients such as Calcium and Phosphorus. The flavor of Parmigiano is an unmistakable mix of sweet milky flavor, yogurt, fresh fruit, and herbs. Each one of the different agings presents a particular taste profile, in general we can say Parmigiano becomes more granular, spiced, and less sweet with longer agings. This cheese pairs well with virtually any food, but we personally suggest to taste it with fruits or berries, aged balsamic vinegar from Modena, and obviously grated on your favorite pasta dish.
