Il Forteto Tuscan Pecorino Stagionato DOP is a Tuscan variety of pecorino cheese which is sweeter and milder than its cousins, Pecorino Romano and Pecorino Sardo. Studies have found traces of the existence of Pecorino Toscano all the way back to the Roman era. This semi-hard cheese offers a more intense flavor and presents a compact structure and a yellow color thanks to its longer aging period than its younger variety. We recommend serving this Pecorino Toscano Stagionato alongside your favorite cured meats, or freshly grated or shaved over risotto, pasta dishes, and vegetables.

In 1977, young Tuscan locals created an agricultural cooperative called Il Forteto which got its start on land borrowed from a friend along with 40 sheep, three cows, and five pigs. Today, in addition to a producer of world-class cheese, Il Forteto is a community and a home dedicated to helping handicapped children and adults achieve their fullest potential. Il Forteto’s operation has expanded to 1,100 acres with a herd of 250 Chianina cattle, with sheep milk sourced only from local farmers. Among the primary exporters of the famed Pecorino cheese typical of Tuscany, Il Forteto’s cheeses are sold all over the world.
