Description: This Pecorino from Tuscany is gaining popularity in the recent years as a sweeter and milder option to its cousins Pecorino Romano and Pecorino Sardo. Studies have found traces of the existence of Pecorino Toscano all the way back to the Roman era. This semi-hard cheese presents a compact structure and a color that goes from white for the less aged wheels (Pecorino Toscano Fresco) to yellow-ish for longer agings (Pecorino Toscano Stagionato). Usually a Pecorino Toscano Fresco is aged for about 1 month, when the Stagionato takes minimum 4 months to complete its aging process. It’s advised to serve the Pecorino Toscano Stagionato grated or shaved, and the Pecorino Toscano Fresco paired with your favorite jam or honey.
