This Italian imported bucatini pasta from the family company Rummo is made from semolina durum wheat grown in the Campania region of Italy. Thanks to the patented slow processing method created and used exclusively by Rummo, known as Lenta Lavorazione®, (literally "Slow Processing" in Italian), Rummo Pasta retains a firm, al-dente texture even when cooked longer than needed, or reheated.
In addition to this processing method, the hearty texture of this Italian bucatini pasta comes thanks to the bronze die used to expel the pasta for a rough surface (perfect for clinging to sauce) and its high protein content (14.5%). This dried pasta cooks up a little quicker than most so keep that in mind. The result was the best al dente Bucatini all'Amatriciana we have ever had. It is hard to explain but this just the springiest, best tasting dried pasta we have ever had. Head and shoulders above the rest.
