Pecorino Sardo Dolce DOP represents one of the culinary masterpieces of Sardegna. This is the least aged version of our Pecorino Sardo DOP. The aging is between 20 and 60 days and the structure is semi-soft. Pecorino Sardo Dolce DOP has a sweet taste with a slightly acidic after taste, its crust is really thin and lightly straw colored. Our favorite pairing for this cheese is a chilled glass of Vermentino di Sardegna next to a plate of fresh seasonal vegetables.
